In this month’s Sunday Guides, we will journey through Mallorca Spain, highlighting our favorite spots.

Spain is a destination loved by many, with its rich history, culture and the home of Paella. If you are a foodie, the Spanish Desserts such as Ensaimada, fresh seafood, Sangria, Cava wine and Tapas will delight. Dine under watercolor sunsets while exploring seaside villages. Walk along streets with pink homes draped in bougainvillea.

Each morning, we sat outside planning our day over coffee, fresh squeezed juice & breakfast, a map in hand. There is something so wonderful about the feel of a paper map and all the joyous adventures ahead that one will plan!

Mallorca is situated in the Balearic Islands, Illes Balears off the coast of Spain. You may wish to plan your trip to include Madrid, or perhaps Barcelona to see Gaudi’s Catalan Modernism before heading off to Mallorca.

In this issue we are sharing our favorites. We rented a car and toured the beautiful island exploring villages, bakeries, scenic views of the sea perched high above it all. Travel along with us in this delightful issue!

I recently flew British Airway from Newark and spent a week in beautiful Edinburgh Scotland. My driver Robert took me to The Witchery by The Castle on an impressive scenic tour to the Old Town. What a gracious thing for him to do, he is very proud of Edinburgh as he should be. Over the week I was immersed in a quaint city and surroundings, with a medieval history dating back for many centuries.  I became quite fascinated with Mary Queen of Scotts, all the delicious pubs, scenic drives with Lochs surrounded by snow capped mountains and sheep grazing on green pastures. There were romantic hotels with harpists and hight teas and interesting architecture! This beautiful city is where the old town meets seamlessly with the new town. Walking the Royal Mile was one of my favorite things to do and walking on Princes Street from the Balmoral Hotel through the garden passing by the Scott Monument to the nearby National Gallery was lovely. I toured castles, gardens, Holyrood Palace, The Highlands, Lochs, chocolate shops, whisky tours, food tours, shopped in the countryside for kilts and tartans, North Sea, the Firth of Forth, visited museums and more. This charming city is rich in culture, lore, food, scenery and kind people. I am continually delighted to meet the loveliest people around the world on my travels. As a travel lifestyle writer and editor this means so much to me and greatly enhances the beauty and content of our Sunday Guides. Touring gardens, visiting flower shops, fashion exhibits and boutiques inspires my designs for my wonderful clients. Winter is a wonderful time to begin dreaming up and planning a new garden. It is also a wonderful time to plan any updates to an existing garden. We recommend keeping a garden journal to docoument all of your ideas, dreams, plans and sketches. In this article we will share our decades long experience creating beautiful rose gardens. We are often asked for tips on caring for, planting, and designing a rose garden. We have been growing roses for 30 years at our historic home in zone 6a Northeast New Jersey.

The Paris House Garden

There truly isn’t anything like a beautiful rose. Their sharp thorns are perhaps indicative of what’s to come. Like their thorns, they can torture you a bit with how much care goes into them. Don’t let that discourage you!  Gardeners are all too aware these beauties are high maintenance. Yet with all things we love & find fulfilling it is enjoyable & worth the effort. Once you successfully grow roses in your home garden you will be rewarded with their beauty & scent.

Some roses have the most enchanting scent, perfumed fragrance floating through the garden. Others bloom repeatedly if pruned regularly.

Then there are the ones that show up for a short time leaving us speechless with their beauty and then, just like that they are gone until next year. Gardeners can feel “both mortal and immortal in their garden” I can understand that sentiment, as the garden needs us as much as we need the garden.

I could live a million Springs & that would still not be enough time in my Beloved Garden. We grow hundreds of roses in our New Jersey Garden. Follow our tips and you too can successfully have a rose garden.

I don’t take this responsibility lightly, I have a team helping me & we work hard keeping them healthy. We use our gardens for our companies photoshoots etc, so it needs to be “picture perfect” year round!

In this article we will focus on the “Beginners Guide To Planting A Rose Garden”

Our garden is situated on 5 acres and requires several people to maintain. So let’s start small here as to not overwhelm.

Before you get started chose a sunny spot and prepare your soil. Clear out grass, debris and weeds.

-Planting - dig hole twice as big as pot, plant at same level - usually those instructions are on every label.

-Dirt - 3 parts good garden soil, 1 part peat, maybe some rose tone,  fill hole to top of plant, water in and add more soil after first water cause original soil will settle. *** before planting gently loosen up the root ball so roots can thrive and add a layer of mulch to keep moisture in and weeds away.

-Some plants will be shipped bare root. Typically these are soaked in water before planting. Follow the directions in the box carefully or on the label very carefully

-make sure to water.

Ten Tips

  1. Choose a sunny location & read the care instructions on your roses

  2. Amend your soil with a rich compost - your garden center can help you with this.

  3. Plant according to the instructions. Give your roses plenty of space.

  4. Feed and water regularly

  5. Spray to prevent black spots, do this in early spring before spots appear!!!

  6. Remove Japanese beetles

  7. Prune all dead canes each spring to prevent disease

  8. Deadhead regularly to encourage healthy roses and encourage more flowers

  9. Visit gardens for inspiration

  10. Educate yourself on the different varieties of roses and their care

Sunday Guide: Saratoga Springs, with Kids! By Jennifer Taber VanDerwerken

Beautiful Saratoga Springs, New York is often called “The Summer Place to Be”, when major tourist attractions like the Saratoga Race Course, the New York City Ballet summer residency, and Saratoga Performing Arts Center are in full swing, and beckoning to tourists from across the globe.

But Saratoga is just as vibrant and gorgeous in the fall, with bright bursts of foliage, temperate weather, and the always bustling downtown attractions ready to be enjoyed. Saratoga is also a wonderful place to call home for locals, and as such, offers plenty of recreation for families. 

Here’s a family-friendly guide to one of the prettiest little cities you’ll ever see, for the special time of year when New York puts on her golden colors, and shines in all her autumnal glory.

Where to Stay:

The Adelphi Hotel (365 Broadway)

This historic, boutique hotel isn't short on swank, but their welcoming attitude to kids (and pets!) and their premium location right on Broadway makes it a great place to stay for families. There are multiple suites available to accommodate families, and two great eateries located right inside the hotel.

The Gideon Putnam (24 Gideon Putnam Road)

Another historic gem, this hotel is located right inside Saratoga Spa State Park, which makes it perfect for the family who wants to walk out of the hotel and stroll right to geysers, creeks, natural spring water fountains, or The Automobile Museum.

Where to Eat:

For breakfast, you have a plethora of options at your disposal. You can sit down for scrumptious cinnamon roll pancakes at local favorite, Sweet Mimis (47 Phila Street), or grab a delicious bagel and coffee at Uncommon Grounds (402 Broadway) and take it to go. Triangle Diner (400 Maple Avenue) is also a perennial favorite, offering inventive, elevated takes on classic dishes, like eggs benedict, and BLTs. All of these spots are also open for lunch, and make great options for even the pickiest eater.

Any parent traveling with young kids knows that when the energy starts flagging, a little sweet treat can save the day. Saratoga has got you covered with Mrs. London’s (464 Broadway), a charming bakery offering patisseries, breads, cookies, and delicious coffees. Kilwin’s (420 Broadway) candy shop, which you can scout just by the delicious smell of their caramel apples, has gleaming cases filled with every kind of chocolate treat you can imagine, and wonderful ice cream too.

For dinner, Druther’s (381 Broadway) is always fun, with an accessible menu, outdoor seating, and a fun, casual vibe. Their macaroni and cheese is perhaps their signature dish, and what kid doesn’t love that? Forno (541 Broadway) is a great spot for delicious Italian food, and if the weather is with you, their porch is a perfect spot to people-watch while you dine.

The Brook Tavern is a warm and charming restaurant, just a quick stroll from the bustle of downtown and located in a picturesque neighborhood of sprawling Victorian homes.

The Wishing Well, open since 1936, is a favorite of locals and a great spot to make special family memories on your visit.

Where to Shop:

Because Saratoga is such a family-friendly community, there is no shortage of children’s stores to browse or pick up that special souvenir. Lex and Cleo (454 Broadway, unit 2) is a charming shop with a high-end selection of beautiful clothes, stuffed animals, and toys. G. Wiliker’s (461 Broadway) is a consummate old-fashioned toy store, with incredible year-round window displays and everything from the most classic games to trendy toys. And Northshire Bookstore (424 Broadway), one of the most popular independent bookstores in the northeast, has an entire second floor dedicated to the wonderful world of children’s books. The staff is knowledgeable and kind, and they often host children’s reading events and activities.

Things to Do:

Upstate New York is apple country, and if you’d like to head to an orchard to pick your own while visiting, you’ll find plenty of options in Saratoga County and beyond. Saratoga Apple (1174 Route 29, Schuylerville) is a favorite among locals. 

The Children’s Museum at Saratoga (65 South Broadway) is a lovely little museum design for children aged 7 and younger, and houses excellent hands-on exhibits to delight your child’s imagination.

Beautiful Congress Park (320 Broadway), located right on Broadway with all of the shops and restaurants, is home to a historic wooden carousel, which you can ride for just $1.00. Go for a spin on weekends in the fall, from 11 AM to 6 PM. And don’t miss the Congress Park ducks who’ll likely approach you looking for a treat! Yaddo (312 Union Avenue) is a world-famous artist’s retreat, and their gorgeous manicured gardens are open to the public. This past summer, they installed the Yaddo Reads Lending Library for young readers where you can take or leave a book. Take a stroll through the garden and a peek at the koi fish in the multiple fountains. It’s also the perfect place for a picnic.

Saratoga is famed for its mineral springs, which the Victorians believed could cure almost any ailment. There are active springs and drinking fountains throughout the city, some flowing with crystal clear water, others with slightly fizzy, highly mineralized waters. Children will love getting to taste test the assorted fountains for those that are fresh and appetizing, and those that you can smell from a few feet away. We love every season of the year. However, there is something poetic about Fall Foliage in the Adirondacks, New England and Canada. There is a reason people travel from around the World to visit during the Autumn months. Having grown up in Upstate New York, close to the Vermont border, was the most idyllic childhood. The scent of Cider Donuts, Apple orchards, Hot Cider and more perfumed the air. Jamaican Pork Tenderloin With Sauce Caribe (adapted from southern living)

 
 

We have been making this DELICIOUS and EASY recipe for 21 years & EVERYONE loves it! If you are in the Chester NJ area we highly recommend Chester Meat Market. I have been shopping there for decades. It’s outstanding.

  • coconut mint iced tea add rum if you like

  • Dessert - too hot to bake?!!! or simply don’t feel like spending all day in the kitchen!!! No worries get a dessert delivery straight to your door!!! We love Mini upside down pineapple cakes that will pair beautifully with our Tropical Dinner Menu!!! We linked them for you! Fun tip!!! Add a sparkler to the top of each mini cake and WOW your guests (please use EXTREME caution around guests & children and make sure to put out flame in water before disposing)

Recipes:

Our Grilled pork tenderloin topped with the most delicious red current Caribe Sauce. It’s amazing!

Jamaican Pork Tenderloin With Sauce Caribe. (Our pork tenderloin is from Chester Meats, Chester NJ.)

Recipe Adapted from southern living 2002 issue!!

Ingredients:

  • 1 1/2 to 2 pounds PORK Tenderloin (our pork tenderloin are from Chester Meats!)

  • 3 tablespoons fresh orange juice

  • 1 & 1/2 tablespoons McCORMICK Gourmet Collection Jamaican Jerk Seasoning (or substitute with your favorite brand)

  • 1/2 cup red currant jelly

  • 1/4 cup Dijon mustard

  • 2 tablespoons dark rum or orange juice (I use orange juice)

  • Garnishes: chopped honey-roasted USA PEANUTS, tropical pesticide free edible flowers

  • Long-grain and wild rice (optional)

Directions:

Preheat Grill

Spoon the 3 tablespoons of orange juice over the tenderloins. Sprinkle 1 & 1/2 tablespoons Jamaican seasoning over the top.

Grill pork until cooked through, do not burn

While pork is grilling make the sauce.

Add these ingredients to sauce pan:

1/2 cup red currant jelly

1/4 cup Dijon mustard

  • 2 tablespoons dark rum or orange juice (I use orange juice)

Heat until combined and sauce is thinned a bit

Cover pork & let rest for 5-10 minutes

Slice and place on serving platter. Spoon sauce over, sprinkle with honey roasted peanuts. Garnish.

Serve warm!

Coconut-Mint Iced Tea

Of course, if you're in the mood for a tropical cocktail, add a splash of rum.

8 SERVINGS

2 cups fresh mint leaves (from 2 large bunches)

8 cups double-strength fresh-brewed tropical blend iced tea (such as original blend Paradise brand)

1 cup (or more) coconut syrup*

5 tablespoons (or more) fresh lemon juice

Ice cubes

Place mint leaves in large pitcher. Crush mint with muddler or wooden spoon.

Add hot tea, 1 cup coconut syrup, and 5 tablespoons lemon juice. Add more coconut syrup by tablespoonfuls and lemon juice by teaspoonfuls, if desired.

Cool completely. Fill glasses with ice, pour tea over, and serve.

*Available at specialty foods stores.

Recipe

Scrape one vanilla beam into a container of greek yogurt. We like FAGE full fat

Fill small bowls with layer of yogurt

Top with an excellent quality granola

We used bear naked granola

Next top with honey to taste

Then add mixed berries

***This can be made the night before & actually tastes better the next day!

Brussels Sprout Pizza

BRUSSEL SPROUTS PIZZA

Preheat oven & pizza stone in 400 degree oven

    • Make a Parmesan cheese mayo mix- combine aprx 1/2 cup mayo & 1 cup shredded parm (not finely grated) season with fresh ground pepper & kosher or sea salt

    • Sauté 4 medium yellow onions in 2-3 tablespoons extra Virgin olive oil season w/ s&p

    • Add aprx 1 cup - of peeled brussel sprouts Sauté through

    • Carefully remove pizza stone from oven

    • Spread thin layer of cheese Mayo mixture over each -good quality -naan bread (feel free to grate a little more Parmesan cheese over each pizza) and a layer of sautéed brussel sprout onions on top

    • Add your pizzas to oven

    • Bake until golden & bubbly 10-15 minutes keep an eye on them so they don’t burn

    • Remove from oven

    • Drizzle with a little pumpkin seed oil

    • Serve & enjoy

    • An autumn beer, red wine, glogg, hot mulled cider will pair beautifully

    • We recently had glogg in Scandinavia & it’s delicious!!

    • lightly dressed salad would be lovely on the side

    • For Dessert our puff pastry apple tatin with a side of pumpkin ice cream is heavenly

    • Pizza cooking autumn fall food BRUSSEl sprouts

Steak Frites (With the easiest shortcut to make delicious Truffle Gorgonzola Fries) We top our Steaks with Maitre D’ Hotel Herbed Butter!

 
 

Steak Frites & a glass of red wine transports me right back to a bistro in Paris. We make ours with fillet tenderloins and they are so delicious! We love The Balthazar cookbook and use their recipe. I will outline here & go over making “Maitre d’hotel butter”

Let’s start things off with a very quick & easy version of Gorgonzola Truffle oil French fries ( I also included a lengthier version below from a recipe graciously given to me from The Breakers Hotel in Palm Beach Florida). I have taken cooking classes & shopped food markets & mercado around the world for years. I love bringing back inspiration from my travels to my home kitchen and hopefully inspiring our readers, friends, & family to “Get Cooking”

Shortcut Gorgonzola Truffle Fries

1 bag thin cut frozen French fried

Good quality truffle oil (we used black truffle oil

A small sprinkling of sea salt (optional)

Fresh ground black pepper

Block of Gorgonzola cheese

Preheat oven to 375

Spread thawed fries out on baking sheet

Add a little sea salt & cracked pepper

Bake in oven until they begin to crisp up

Remove from oven

Drizzle a small amount of truffle oil over fries & toss

Crumble Gorgonzola on top of fries ( use as much or as little, depending on how much you like) I typically use about half of the block of Gorgonzola. Don’t over power the fries.

Return to oven and continue to bake

*** I like to then broil for a few minutes to get the fries nice and crispy. But please take care to NOT walk away as they can burn very quickly. I watch them closely

I typically do this while my steaks are cooking, either on the stove in a grill pan ( we love Le Crueset) or on an outdoor grill

Remember to let your steaks rest after grilling to lock in all that delicious juice.

Maître d’hotel Butter

(Herbed Butter)

FOR THE MAÎTRE D'HÔTEL BUTTER

 
 

Adapted from Balthazar, (however, we made several changes in our version below)

½ pound (2 sticks) unsalted butter, softened (personally we like using one stick salted & one stick unsalted)

2 tablespoons finely chopped flat-leaf parsley

1 shallot, finely chopped

1 garlic clove, finely chopped

½ teaspoon chopped fresh sage

1 tablespoon chopped fresh chives

1/2 teaspoon salt

Pinch of freshly ground black pepper

Combine ingredients & roll into cylinder, wrap in plastic or parchment and chill in fridge.

•FOR THE STEAKS

We used fillet

4. steaks, about 10 ounces each, about 1 inch thick

2 tablespoons salt

2 tablespoons coarsely ground black pepper

3 tablespoons olive oil

Plate your steaks and Gorgonzola truffle fries and add a little Pat of Maître d’hotel butter on top of steaks letting it melt gloriously onto hot steaks!

6 Idaho potatoes, one package of gorgonzola cheese, a triangle wedge 1 cup of heavy cream 2 tbsp of truffle oil (either black or white) – I used black, because that is what I had on hand. The juice of half an orange, sea salt and freshly ground pepper, to taste Scrub potatoes clean, keeping the skin on. Cut potatoes in half lengthwise and place the potato half in the slicer, pull down the lever to make even fry-shaped slices.
Fill your deep fryer with vegetable oil to the appropriate level indicated in the directions. Fry potatoes in batches until golden brown, taking care to not crowd them.
Drain on paper towels and sprinkle with sea salt
Add the heavy cream to a saucepan and reduce over medium heat for about 5 minutes. Stir in chunked up pieces of the Gorgonzola cheese. Add the truffle oil, continuing to stir. Remove from heat and add the juice from half an orange slat and pepper to taste. Place French Fries on a decorative platter and drizzle with gorgonzola sauce and serve.
